September Days and Apples just seem to go together! Perhaps because of my background in education mixed with fond memories of apple treats from my childhood, apples recipes are a favorite. This Jewish Apple Cake is delicious and easy to prepare with ingredients you probably keep stocked in your pantry. Shared with me during my days in a Junior Women's Club and published in our club cookbook, this cake is a yummy favorite around our house! (Find the recipe below the photo!)
- 5 large tart apples
- 2 1/2 Tbsp cinnamon
- 7 Tbsp sugar
- 4 large eggs
- 2 1/2 cups sugar
- 3/4 cup pecans or black walnuts
- 1/4 cup orange juice
- 3 tsp baking powder
- 1 tsp salt
- 3 cups flour
- 1 cup cooking oil
Peel and slice thin the apples. Mix apples well with the cinnamon and 7 Tbsp of sugar, making sure apples are well covered with cinnamon and sugar. Set aside. Mix other ingredients well, except nuts.
Add nuts. Into well greased 10 inch tube pan, pour half of the batter; add half the apples; add half the batter and the rest of the apples on top. Bake at 350 degrees for 1 hour and 45 minutes, checking the cake after the first hour using a toothpick. Cake is ready when the toothpick comes out clean. Let cool in pan at least 20 minutes before taking out of the pan.
GLAZE (optional)
1/2 stick butter 3/4 cup sugar 1/4 cup buttermilk 1/2 tsp baking soda
Melt butter and add other ingredients. Bring to a full boil. Pour over cake while still in the pan directly from the oven. Let set for 1 hour before turning out on serving plate.
